Hi friends, today i discuss about the meat cookery. It is very important of meat.
The different types of meat are:Lamb, Mutton, Beef,Veal, Pork and Game meat.
In order to cook meat properly, it is important to know the composition and the structure of meat.
Muscle is tissue is composed of very minute fibres bound together in bundles. They are tiny tubes filled with water, in which are heald the mineral constituents , vitamins and emulsified fat, protein of meat. The muscle fibres are held by connective tissues which are of two kinds. The white connective tissue is collagen, and the yellow connective tissue is elastin.
